Sugar cane juice is lovely and delicate. It’s not overly sweet  (as you would imagine) and is in fact one of the most popular summer drinks in Cabra. The juice is laboriously extracted through a crushing machine performed right before your eyes. Squeezed fresh! It’s served with plenty of ice and is often infused with fresh orange or kumquat to layer the flavours.

However my personal favourite is suagr cane juice WITH PASSIONFRUIT. This is a recent discovery of mine but is already an obsession! I could only describe the taste as REFRESSSSSHING in a cup! Sadly I have only found it at one store.

Where? For a regular sugar cane juice, look for a silver sugar cane machine (often distinguished by the desiccated sugar canes poking out in one end).
