Pandan Waffle

I would like to challenge you. Here is the dilemma, culinary history has always upheld that the original version is always the best…or is it?? I know that this rule definitely applies to Coca Cola …I would be happy to never taste another cough medicine flavoured oops,Vanilla flavoured Coke in my life.
Please consider exhibit A; the traditional waffle. The exterior is a bit too hard, it can be dry at times and frankly, it doesn’t really hold up on it’s own without fancy embellishments such as maple syrup, ice cream or bacon.
BUT,
Exhibit B; the pandan waffle is a legend on its own!! Biased ?? OF COURSE I AM!
The pandan waffle is a famous “street food” here is Cabramatta. These shrek-green fluffy waffles are soft, light, sweet and only 10mm thick. The delicious smell of a cooking waffle is always in the air, mostly due to the continous demand of these hotcakes. The combination of fragrant pandan and finely shredded coconut is heavenly. The best part, it will only cost you $1.50. Yep…crazy ain’t it? Pocket change can buy you a pandan waffle!!!
The secret? Make sure you request a fresh piping hot one straight off the iron! I promise you, those extra 5 minutes are worth the wait. You will not regret it. Yum!
Where? Head straight to the nearest bakery you see in Cabramatta and look for the unmistakeable waffle makers (it may be hidden behind an acrylic booth to the side of the displays). My favourite is Viet Hoa Bakery. There are two, one at 105 John St that is opened 24hours & another at shop 3 /48-50 Hill St, Cabramatta.
And yes to all those cynics, I have been to Mannekins and eaten their waffles. Smells delightful but not value for money. Please don’t make me eat another highly processed IHOP waffle either.
